Crispy Roasted Parmesan Potatoes

Everyone needs a simple roasted potato recipe on hand. It is a classic side dish that everyone enjoys and takes minal time and effort to make.

This recipe has a unique ingredient to make it special and get everyone asking you for the recipe. Any cook can master this recipe at home and enjoy it with a juicy grilled steak, chicken or for brunch with a fried egg sizzling on top.

Crispy Roasted Potatoes / Sunday Table

 

Ingredients

  • 5 cups dizzied golden potatoes (skin on)
  • ¼ cup extra virgin olive oil
  • Salt and Pepper to taste
  • 1 teaspoon dried mustard
  • ½ cup freshly grated parmesan cheese
  • 2 tablespoons fresh parsley or cilantro

Preparation

Dice the potatoes into small cubes with the skin on. I like to use golden potatoes because they have less starch and get crispier in the oven.

Start by heating a cast iron skillet with olive oil. Add in the potatoes and season with salt and pepper. Cook them until they start to soften about halfway.

Add in the dried mustard and an extra drizzle of evoo. Place in the oven to finish cooking at 425 degrees for 15 minutes turning halfway.

Finish with the parmesan cheese while still hot and then top with the fresh herbs.
