The one morning favorite you will come back to brunch after brunch. This french toast bake is a recipe to learn by heart. It is warm, sweet, has the most decadent buttery crumble and helps set the tone for any weekend.
Ingredients
- 1 loaf brioche bread
- 4 eggs
- 2 egg yolks
- 1 ½ cups oat milk or whole milk
- ¼ cup brown sugar
- 2 teaspoons pure vanilla extract
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- Pinch of salt
For the Crumble
- ½ cup of oats
- 4 oz of cold butter
- ¼ cup almond flour
- 3 tablespoons brown sugar
- 1 teaspoon cinnamon
- Pinch of salt
Preparation
- Preheat the oven to 375 degrees.
- Make sure the bread is stale,a bit firm. This allows for the custard to be absorbed by the bread. Slice the brioche into cubes.
- Place in a large greased baking dish.
- Prepare the custard in a separate bowl. Whisk the eggs and egg yolks first. Then add the rest of the ingredients.
- Pour the custard evenly on the bread. Push down the bread to soak all the pieces.
- Prepare the crumble with oats, flour, cold butter cut into small cubes, sugar and cinnamon. Mix with your hands and leave bits of butter in larger pieces.
- Sprinkle the crumble on top and bake covered for 50 minutes.
- Uncover and finish baking 10-15 minutes until the crumble is golden and bubbly.

- Add some pumpkin spice for a seasonal twist during the fall or lemon/ orange zest for a spring and summer refresh.
- Bake in a muffin tin for individual servings.
